Whew… another week under my belt! Is it just me or have these past two weeks flown by?
Let me begin by saying… this week wasn’t definitely not as good as the first. Now, it has nothing to do with the plan! The plan is awesome! We had a little bit of a crazy snow storm a.k.a. Smowmageddon, so bad that my husband and I only went into work one day this week! We stayed inside our house from Sunday after church until Wednesday. We had to get out of the house so we decided to get a pizza… healthy? Not really. But I didn’t feel guilt and here is why: I have never been this disciplined when it comes to my diet and exercise, and I truly believe everything in moderation. So I ate pizza one time in two weeks? Oh well! I am proud of the progress my husband and I have made 🙂
Now on to the good stuff… some weekly meal highlights:
- Monday night was absolute favorite because I discovered what may be the BEST invention ever… the crockpot!!! Boy is that thing amazing! We had easy crockpot chicken with carrots and potatoes. I placed everything in that morning and about 6 hours later it was ready to eat! It was de-lish. I used lean chicken, idaho potatoes and organic big carrots.
- Tuesday night my husband and I sort of made our own version of healthy stir fry, no meat. We took leftover veggies that we had (onion, carrots, broccoli), leftover brown rice we had cooked a few nights previous and cage free organic eggs. We added just a little bit of soy sauce and tada! An entire dinner meal made from leftovers. I will give the credit to my husband on this one 🙂
- Snacks included veggies, fruit and yogurt.
As far as exercise goes, I did do my three days of 20 minute cardio sessions and two strength training sessions.
