4 Weeks of getting in shape and being healthy has been such a huge blessing! I am SO proud of us, especially my amazing husband who has supported me and encouraged me everyday. We both are feeling better and have more energy than we had before we started the challenge.
This week we had another crazy random snow storm, and went out to eat for our 1 Year Anniversary (which is technically on sunday). But for the most part we stayed to our schedule.
There was a time this week when I was craving fast food so bad (this shows how addicted to it I used to be… why would anyone crave fast food?) I mentioned going to Krystal’s one night for dinner and after sitting in the parking lot for almost 10 minutes, praying and justifying and discussing pros and cons, we made the decision NOT TO EAT IT! Instead we came home and had some awesome organic pasta which I will explain more about at the bottom with the weekly meal highlights 🙂
On the top is the amazing Organic Penne Pasta with Chicken Meatballs! It was amazing. We used organic penne, chicken meatballs (which tasted better than Italian sausage I must say), one jar of sun dried tomato alfredo sauce, and one whole jar of simple truth organic tomato and basil sauce. It was similar to pasta meals we made before but richer and extra tasty! On the bottom, I stole a recipe I posted about from Week 1, which was the tomato basil panini. This time I cooked it on the stove in a skillet. The skillet is much easier to clean than a panini maker!
We ended the week with one of our ALL TIME favorite meals… Chicken Pot Pie 🙂
