Ahh it is nice to be back on schedule… sort of! Due to unforeseen things that came up, we couldn’t spend as much on groceries as usual for the challenge. We only bought some basic items including: lean chicken, fresh veggies, broccoli florets, milk, bread, eggs, and turkey sausage.
We didn’t do a weekly menu but the some of the dishes we came up with were absolutely wonderful and some were ingredients we already had, we just had to dig them out 🙂
As far as exercise goes, I didn’t get to do the strength training; any free moment was taken up! However, I did get to ride my bike three days this week around our neighborhood, due to the absolutely gorgeous weather 🙂 Anybody know when that weather will be returning to us?
Without further ado, here are some weekly meal highlights:
- For the chicken and veggies, we lightly fried Simple Truth Lean Organic Chicken Tenders in some Organic Olive Oil, after dipping each tender in cage free eggs and whole wheat flour. We chopped up organic carrots, broccoli, cauliflower, and onion and sauteed them in a pan in some olive oil as well. The whole process took us probably 20 minutes and we had a wonderful, filling (but not too much) meal!
